Our brand-new fermentation lab in Hong Kong is officially open.
We built this lab to be a hub for fermentation development and testing. You can see our fermentation chambers in action, but more importantly, it’s a space for experimenting. We’re inviting chefs and flavour creators to come and work on their own fermentation projects.
Fermenting Food Trimmings

A part of this new lab is focused on tackling food waste, since by many estimates one third of all the food produced is not consumed. We’re turning fruit and veggie scraps, which are things that usually get thrown out into high-value, delicious ingredients.
