Sauerkraut is a finely shredded cabbage, fermented in different ways with lacto-acid bacteria. It originates in Central Europe and was originaly developed for it’s unique taste and long shelf life. It has a sour and fresh taste profile and is often enjoyed with sausages and meats in Germany.
